I can highly recommend “366 Delicious Ways to Cook Rice, Beans, and Grains.” I’ve been using this cookbook a lot lately. Last night I made Split Pea-Barley Soup for dinner. It was excellent, and I’m ready glad I made enough for lunch today also.

In addition, this cookbook is also a great resource for planning and cooking on Meatless Monday.
